With all of the chaos that surrounds the holiday season, whipping up some Christmas treats with the kids can almost seem like a chore. That is, unless you find an easy Christmas cookies recipe that will take minimal time, and is so simple that even a toddler can do it. Ok, maybe it’s not that easy, but it’s certainly simple enough that a toddler can help. Here’s one of our favorite holiday cookie recipes that the entire family will love.
What you need:
- 3 cups of rolled oats
- 1 1/2 cups of brown sugar
- 1 cup of roasted peanuts
- 1 tsp of vanilla
- 1/2 cup of peanut butter, creamy
- 1 stick of butter
- 1/2 cup of heavy cream
- 1/3 cup of cocoa powder, unsweetened
What to do:
Start by grabbing a large saucepan and heating up the stick of butter over medium heat until it completely melts. Once the butter is melted, add in the heavy cream, cocoa, and brown sugar. Mix it up well and increase heat to high. Keep stirring until mixture comes to a boil.
Once boiling, remove the saucepan from the heat and add in vanilla and peanut butter. Once the mixture is smooth, add in the oats and the peanuts.
Using a large spoon, drop spoonfuls of dough onto a cookie sheet covered in wax paper. Let them cool completely and sit for 20 minutes. Enjoy!
