Make a Mothers Day Brunch Your Mom Won’t Soon Forget

Mother’s Day is coming up soon and what better way to celebrate everything your mother has done for you by cooking her a nice Mothers Day brunch. Many families go out for dinner to celebrate Mothers Day, so whipping up a delicious meal for your mom earlier in the day is a perfect way to celebrate the holiday.

Now the only question is what to make. Luckily, we can help with that!

Mothers Day Brunch

  • Avocado and Grapefruit Salad
  • Marmalade Muffins
  • Baked Eggs with Spinach and Tomatoes
  • Pink Lemonade Mimosas

What You’ll Need:

  • For the Avocado and Grapefruit Salad
    • 4 avocados
    • 4 pink grapefruit
    • 1 Tbsp dijon mustard
    • 1/3 cup olive oil
    • 1/4 cup lime juice
    • 1 Tbsp chives (chopped)
    • 8 whole Boston lettuce leaves
    • Salt and pepper
  • Baked Eggs with Spinach and Tomatoes
    • 4 eggs
    • 1 clove finely chopped garlic
    • 1/2 can drained diced tomatoes
    • 1 bunch of spinach
    • 1 Tbsp olive oil
    • Salt and pepper
  • Pink Lemonade Mimosas
    • 1 bottle of lemonade
    • 2 pints of strawberries
    • 1 can frozen raspberry lemonade concentrate
    • 2 lemons
    • 1 bottle champagne


    • Peel grapefruits and pull into sections
    • Halve avocados and remove pit. Scoop half out of avocado skin and slice avocados lengthwise into 1/4 inch slices
    • Sprinkle a few teaspoons of lime juice over avocado slices to prevent them from browning
    • Whisk in a bowl: 2 Tbsp of lime juice, dijon mustard, salt, and pepper. Lastly, whisk in olive oil.
    • Place lettuce leaves on a large plate or platter. Alternate grapefruit and avocado slices on top of the lettuce leaves and drizzle with dressing and sprinkle chives on top.
    • Serve!
    • Preheat oven to 400 degrees
    • Add olive oil to a medium sized skillet and heat to medium-high. Add garlic and cook until brown (1-2 minutes)
    • Add tomatoes, 1/2 tsp salt, and 1/4 tsp pepper. Simmer for 3 minutes
    • Add the spinach, and cook it until it wilts
    • Move the mixture to a 2 quart baking dish
    • Separate the egg whites into a bowl. Beat until foamy and then pour over the mixture. Add egg yolks to top.
    • Bake for 20 minutes or until egg whites are set
    • Serve warm
    • Remove the stems from the strawberries and wash under cold water
    • Puree the fresh strawberries with the lemonade
    • Once they’re combined, mix the puree mixture, champagne, and frozen concentrate in a punch bowl.
